Coconut Oil Chocolate Chip Cookies
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¾ cup virgin coconut oil, melted and cooled
  • ⅓ cup granulated sugar
  • 1 cup brown sugar
  • 1 large egg plus 1 large egg yolk
  • 2 tsp vanilla extract
  • ½ tsp coconut extract
  • 1 cup semi-sweet chocolate chips
  1. Preheat oven to 350 degrees F. Line large baking sheets with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
  3. In a stand mixer, beat together the coconut oil and sugar for 1-2 minutes. Add the egg, egg yolk, vanilla extract and coconut. Mix until light and creamy. With the mixer on slow speed, gradually add the flour mixture to the bowl. Mix until just combined. Stop the mixer and gently fold in the chocolate chips with a rubber spatula.
  4. Scoop dough onto prepared baking sheets (my cookie dough balls were approximately 1½ inches). Bake for 12-14 minutes or until golden brown around the edges. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
