Apple Cinnamon Butterscotch Muffins
Yield: 18 muffins
  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¾ cup old-fashioned oats
  • ½ cup (1 stick) unsalted butter, at room temperature
  • ½ cup light brown sugar
  • ⅔ cup applesauce
  • 2 large eggs
  • 1½ tsp vanilla extract
  • 1 cup milk
  • ¾ cup butterscotch chips
  • ¾ cup chipped apples
  • ⅓ cup toasted pecans, chopped
  1. Preheat the oven to 350 degrees F. Line two muffin pans with paper liners and set set aside.
  2. In a large bowl, combined the flour, baking powder, baking soda, salt and ground cinnamon. Whisk to combine. Stir in the oats and whisk to combine.
  3. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and brown sugar. Beat until light and creamy, about 2-3 minutes. Add the applesauce, eggs and vanilla extract. Continue beating until combined. With the mixer on low speed, add the dry ingredients in three additions alternating with the milk. Mix until just combined. Stop the mixer. Add the butterscotch chips, apples and toasted pecans. Mix with a rubber spatula until combined.
  4. Divide the batter between the prepared muffin cups. Bake for about 18-20 minutes or until an inserted toothpick comes out clean. Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
